Halloween edition: Jack skellington veggie pot pie

We’re already starting … Continue reading Halloween edition: Jack skellington veggie pot pie

Meatless Monday: Veggie Spring rolls and anniversary shenanigans numero dos

National Nutrition Month® – Enjoy the taste of eating right + a quinoa stew recipe

Vegetarian black bean burgers

I am really excited to post this recipe. I have been meaning to try black bean burgers for months and just never got around to making them….until now. I’ve had the privilege of trying black bean burgers at several restaurants and have enjoyed every one I’ve tried. So I tried to combine my most favorite flavors for this burger. Vegetarian Black Bean Burger: (vegan, dairy … Continue reading Vegetarian black bean burgers

Sweet potato/pumpkin slow cooker vegetarian chili

This recipe is definitely a keeper! Not only was it delicious but all you have to do is throw the ingredients into your crock pot and cook anywhere from 4-8 hours. I let mine sit for about 5 hours on a higher setting and it yielded a nice end result. The large amount of veggies and beans makes this chili the perfect fall comfort food. … Continue reading Sweet potato/pumpkin slow cooker vegetarian chili
