Apple rhubarb (microwave) cobbler

Happy (almost) June! If you guys have been following me on twitter or facebook you’ll know I was out of town all last week visiting my parents for my birthday. Was such a great visit full of delicious food and family bonding time. Fun fact about my parents’ place: they live near a bunch of fruit farms so their freezer is always stocked with delicious local produce. So I made sure to take advantage while I was there and made a few fruit cobblers like this strawberry rhubarb cobbler:

I’m a huge fan of rhubarb so I knew once I got back home I had to make my own version of rhubarb cobbler. Enter my single serve microwave apple rhubarb cobblers. For the cobbler I used kodiak cakes buttermilk pancake mix and the fruit filling is actually an apple rhubarb applesauce I made (recipe for that will be below along with the cobbler recipe). So you actually get two recipes with this blog post – my rhubarb applesauce recipe plus my apple rhubarb cobbler. Win win!

I originally came up with this cobbler recipe last summer when I was craving cobbler but didn’t want to turn on the oven. For those that don’t know, our apartment building seems to be permanently stuck at about 85 degrees all year long. Which is great in the winter but it’s not always so great when it’s hot and humid outside. So I rely on the microwave a LOT. Anyway, I’ve made this recipe countless times with all kinds of fruit fillings. This apple rhubarb versions is one of my favorites, though.

This recipe is super quick to put together and makes 4 single serve portions so you can share with a few friends or hoard them all to yourself. I tend to hoard them all for myself lol

#RDtip: rhubarb never seems to be in season for very long but you can enjoy it all year long by freezing it! Cut stalks into small 1 inch pieces, lay flat on a parchment lined tray, then freeze until firm. Transfer to freezer safe bags and store for up to a year. Use frozen rhubarb same as you would fresh!

Rhubarb applesauce

⁃ 1 granny Smith apple, cut into small pieces (leave skin on)

⁃ 1/2 cup sugar

⁃ 2 cups rhubarb, cut into 1 inch pieces

⁃ water

In a large pot, combine apple with rhubarb, sugar, and just enough water to cover the fruit. bring to a boil then let simmer. I let mine simmer for about 40 minutes. Remove from heat then let cool. enjoy as is or use to make the mini cobblers below.

Apple rhubarb (microwave) cobbler – makes 4

⁃ 6 tbsp @kodiakcakes buttermilk pancake mix

⁃ pinch brown sugar

⁃ 1 tbsp cold butter

⁃ 1 tbsp water or milk

⁃ 1 recipe rhubarb applesauce

Spray 4 small ramekins then divide rhubarb applesauce evenly amongst the ramekins. set aside. In a bowl, combine kodiak cakes with sugar then use a fork to cut in the butter. Add 1 tbsp water or milk to form a dough. Divide mixture into 4 equal sized pieces. Flatten into discs then place on top of the rhubarb applesauce. microwave about 2 minutes. Let cool. for the topping: 1/4 cup plain Greek yogurt + 1 tsp honey + hemp hearts or you could also top with whipping cream. Trader joes has a great shelf stable whipping cream that you whip at home then use as desired.
