Meal Prep (Meatless) Monday: Kodiak cakes pancake French toast muffins; easy, portable breakfast

The start of a new year means we’re all probably trying to get back onto that healthy eating train. So to help, I developed a fun, easy, portable breakfast option – pancake french toast muffins made with my go-to pancake mix, Kodiak Cakes:

The base is actually a pancake mugcake because, well, I was too lazy to make actual pancakes. You could also use bread but I wanted a higher protein option to keep me more satisfied so that’s where the kodiak cake mix comes in. And, I mean, not to toot my own horn but it was the perfect thing to use. The flavors worked so well together. I mean, just look at that gorgeous thang:

For an extra boost of protein, I topped a few of these bad boys with sliders to serve as “meat” to go with my french toast muffins. Seriously, how cute are these sliders?

For the sliders I used my latest obsession, Beyond Meat Beast burger sliders in an effort to keep it more plant based for not only my own benefit but also the environment’s. Meat production is actually quite detrimental for the environment. According to Earthshare,

“‘Most estimates claim that between 1,800 and 2,500 gallons of water go into producing each pound of beef.’ Beef production includes everything from providing water to the cattle to watering fields to produce grain for the cattle to eat. According to The Sierra Club, that same amount of water ‘could produce 16 pounds of broccoli, 25 pounds of potatoes, enough soybeans for three pounds of tofu or enough wheat for nearly five pounds of whole wheat bread.'”

Furthermore, livestock rearing is responsible for nearly 20% of all greenhouse gases (which are destroying rain forests) and accelerate climate change. If everyone chose to go meatless for just one day a week (like Meatless Monday), “the long-term impact could eventually lead to a cut in costs to combat climate change by nearly 50% over the next few decades.” Ok well that’s my spiel lol Onto the recipe!

Kodiak cakes pancake French toast muffins – makes 6

Pancake mugcake

⁃ 3/4 cup @kodiakcakes protein buttermilk pancake mix

⁃ 2/3 cup milk

⁃ 2 eggs

French toast muffins

⁃ pancake mugcake, cut jnto pieces

⁃ 3 eggs

⁃ 1 1/4 cup milk of choice

⁃ 1/4 cup brown sugar

⁃ 1 tsp cinnamon

In a large bowl combine ingredients to make a large pancake mugcake (I split the batter between 2 bowls so it would cook faster and more evenly). Microwave 3-4 minutes or until cooked then set aside to cool. In another bowl combine ingredients (except mugcake) for the French toast muffins. Once mug cakes are cool, cut into pieces then distribute evenly in 6 greased muffin liners. Carefully pour french toast mixture over the pancake mugcake pieces. Cover with Saran Wrap, refrigerate, and Let sit for at least an hour to allow the mixture to soak into the mugcake pieces. Once ready, bake at 350 degrees f for about 25 minutes. Let cool then top with desired toppings and enjoy
