I’m extremely excited to introduce you guys to this awesome product that I came across recently – Nikki’s Coconut Butter:
These coconut spreads are gmo, soy, dairy, and #glutenfree and #paleo! They do contain honey so they are not fully vegan. Macros (for 2 tbsp): 210 cal, 20g total fat (13g sat), 7g total carbs (3G fiber, 3G sugar), 2g protein.
They come in a variety of flavors plus seasonal flavors (the current seasonal flavor is mint chocolate chip). In addition to the mint chocolate chip i was also sent their standard flavors which include chocolate hazelnut brownie, honey pecan pie, vanilla cake batter, and mint chocolate chip. each coconut butter is super smooth and creamy and full of flavor! A more detailed description of each flavor will be below:
*Vanilla #cakebatter – reminds me of a mix between angel food cake and cake batter. of all the flavors I was sent it is the most mellow of all of them but still delicious!
*Honey pecan pie – this is one of my favorites! it has pieces of pecan in it so the flavor is authentic. it has added vanilla, honey, and cinnamon which combine deliciously with the pecans.
*Chocolate #brownie hazelnut – like the honey pecan pie, this one has pieces of dry roasted hazelnut scattered throughout so it also has a real authentic flavor. the overall flavor is reminiscent of ferrero rocher truffles. so if you like those then you’ll like this flavor.
*#Mintchocolatechip – mint chocolate chip is one of my favorite flavor combos so i looove this one. the flavor is reminiscent of andes mints. the mint flavor is a little on the strong side but in a refreshing way. not in an overpowering gross way.
*Dark chocolate fudge – despite my obsession with mint chocolate, this flavor is my top fave of the bunch. the flavor is rich and decadent and simply amazing! Highly recommend!

In the meantime, I’ll just share these coconut butter glazed donuts that I made over the weekend using my 5 minute donut recipe. Recipe will be reposted below!
Vegan 5 minute donuts – makes 5-6 minis
– 1/2 cup pumpkin (or baked sweet potato or vegan yogurt)
– 3/4 cup whole wheat flour (gf option: sub oat flour + 1-2 tbsp coconut flour)
– 1 tsp baking powder
– 1 tsp vanilla
– 1 tbsp olive oil
– 1 tsp sweetener of choice
– 1 tsp cinnamon
Combine all ingredients and mix well! Make sure to use your hands to incorporate all ingredients into a dough. Pinch off pieces of dough, roll out into a thin rope, and form into a donut. Repeat with rest of dough. Microwave 2-3 minutes until fully cooked. Alternatively you can also bake at 350 degrees f for ~25 min. Let cool, top with desired toppings, and enjoy!
