oops I did it again. To be honest, I was never much of a muffin person until I came up with this recipe. It all started when I made a chocolate stuffed pumpkin spice version (here) and I have been obsessively making variations of this recipe ever since.
These muffins are sinfully decadent and delicious but are still relatively healthy as they are made with whole grains and protein! So you can make those muffins and eat them, too 😉 Check out Aloha’s protein-packed recipes after trying these muffins for other healthy ideas!

Chocolate muffins with a peanut butter protein cheesecake – makes 9
1 cup kodiak cakes pancake and waffle mix (check it out here: http://www.kodiakcakes.com/mixes/)
1 cup almond milk
1 tap vanilla
1 tsp cinnamon
1/4 cup baking cocoa
1/4 cup pumpkin purée
1/2 scoop chocolate protein powder (I used Jamie Eason leanbodyforher)
1/2 cup plain greek yogurt
1 tsp vanilla
1 scoop leanbodyforher peanut protein (or 1/4 cup pb2 or another powdered peanut butter)
Get out two Bowls and Combine muffin ingredients in one bowl and filling ingredients in another. Fill your muffin cups half way, place a spoonful of your filling in the center of the muffin, then cover with a couple spoonfuls of batter. Bake at 350 degrees F for ~25 minutes or until baked all the way through.
