what’s better than coffee cake? pumpkin spice flavored coffee cake. this is a delicious pumpkin spiced coffee oat cake that makes for a great dessert…or breakfast….or dinner 😉

This is a great, yummy twist on traditional oats and coffee cake. This is for those of you who want to include oats into your diet but want to mix it up a little. Don’t get me wrong, oats are great but they can get pretty monotonous and boring after awhile. I love making these oat cakes because they not only have a great texture but also a great flavor. And the flavor possibilities are endless. I have already made several variations which I will upload onto my blog…eventually. But just to give you an idea, some of the flavor combos I have made are blueberry pie, chocolate covered strawberry, mocha, chocolate caramel, and carrot cake.

Pumpkin spice coffee (oat) cake – makes 1

1 egg
1 tbsp chia seeds
1 tsp vanilla
1/2 cup almond milk
1/2 scoop @nfsports_ vanilla protein powder
1/2 cup oats
1/4 cup puréed pumpkin
1 tsp baking powder
Sprinkle each cinnamon and nutmeg

Combine all ingredients and mix well. Bake in oven at 350 degrees f for 35-40 minutes. Let cool then drizzle with a cinnamon “icing” (greek yogurt + cinnamon + almond milk).
