I think this is my new favorite dessert. So much so, that I plan on making this for Thanksgiving dinner this year. Yup, no turkey or anything else. Just these baked pears. As you can see, I had a little bit of a photo-shoot with them. They were a little camera shy but they warmed up to me eventually. Observe:
To make, I made a simple granola inspired type recipe which I stuffed into the pears before baking. During baking I drizzled a combination of date caramel and apple cider on top of the pears to keep both them and the granola soft and moist while they baked. The end result was a delicious, nutrient dense dessert that I want to marry.
Caramelized Vanilla spiced Baked pears (using Jamie Eason whey protein) – makes 1-2 servings
1/3 cup oats
1/8 cup almonds
1/8 cup date caramel
1/8 cup diced pear
2 tsp maple syrup
Dried diced plums (or cranberries)
Optional 1/4 scoop Jamie Eason lean body for her vanilla protein powder
1 pear, sliced in half
Date caramel (click here for my date caramel recipe)
Combine first 7 ingredients and mix well. Also add in your protein powder, if using. Set aside. Cut your pear in half and scoop out the seeds. Pour a little apple cider and date caramel in a skillet and cook your pear halves for a few minutes on each side. Scoop your oat mixture inside the scooped out pears and bake at 350 for about 30 minutes. Drizzle some apple cider and more date caramel over the pears as they bake and prior to serving.
