Mocha and salted caramel cheesecake using Jamie Eason natural whey isolate protein

It’s National Coffee day so why not put the coffee cup down and instead celebrate with this mocha and salted caramel cheesecake? I once again used my Jamie eason protein (check it out here) and it worked wonderfully in this recipe.

This beautiful layered cheesecake is not only delicious but also super nutrient dense so it’s a great alternative to traditional cheesecake. These babies are packed with protein and fiber thanks to not only the protein but also garbanzo beans which are baked right into the crust. Middle layer is a coffee cream and top layer is a chocolate and salted caramel cream. The combination of all of the layers is to die for!
Now let’s observe this cheesecake in its natural habitat. Ain’t it a beaut?

Mocha and Salted caramel Cheesecake made with Jamie Eason natural whey isolate protein – makes 3 mini cheesecakes

Crust
– 1 can low sodium garbanzo beans
– 1/2 cup oats
– 1 tsp vanilla
– 1 scoop lean body for her chocolate protein
– 1/8 cup pure maple syrup
– 1/8 cup date sugar

Coffee cream
– 1/2 cup plain greek yogurt
– 1 tbsp instant coffee grounds
– splash almond milk
– 1 egg
– 1 tsp vanilla
– optional sweetener, to Taste

Chocolate and salted caramel cream
– 1/4 cup salted caramel peanut butter*
– splash almond milk (or milk of choice)
– 1/2 cup plain Greek yogurt
– 1/8 cup baking cocoa

*pro tip: make your own salted caramel peanut butter by combining date caramel with some peanut butter until smooth and creamy!

Directions
Combine ingredients in a food processor to make you crust. Press into 3 mini spring forms and set aside. In 2 separate bowls, combine ingredients to make cream layers. Layer your coffee cream then top with your chocolate and salted caramel cream. Bake at 350 for about 40 minutes. Let cool then let sit overnight to allow it to firm up. Enjoy next day!

Macros: 1/2 of 1 cheesecake offers 260 calories, 8 g total fat (1g saturated), 30g carbs (5g fiber, 12g sugar), and 17g protein. Also a good source of potassium, calcium, and iron.
