Mugcake Mondays: strawberry shortcake mugcake in a jar

Layers of vanilla mugcake, strawberry (protein) cream, and strawberries combine to make this pretty little creation that you can easily take on the go, if need be. Also has the option to be made dairy free if you use dairy free milk, yogurt, and protein powder!

Strawberry shortcake layered mugcake in a jar

– 4 tbsp whole wheat flour
– 1 tbsp coconut flour (or another tbsp whole wheat)
– 1 tsp baking powder
– 1 tsp vanilla extract
– ~1/2 cup coconut milk

Combine ingredients to make your mugcake. Add enough milk to make a batter. Microwave batter for about 1 min 30 sec then set aside to make your strawberry cream:

– 1/3 cup dairy free coconut yogurt
– 1/4 cup strawberries
– splash coconut milk
– 1/2 scoop vanilla protein powder

Combine all ingredients in a blender until smooth and creamy.

Get out a small jar and throw in a chunk of your mugcake then layer it with your strawberry cream and a couple strawberries. repeat process until you reach the top of your jar. enjoy!
