This recipe has been one of my most popular on instagram so I decided it was worthy enough to upload to my blog.
With it feeling like fall around here lately, I have been in the mood for all that fall brings like caramel apples. So I made this healthier twist on a caramel apple – a single serve mugcake nestled inside a hollowed out apple then topped with date caramel, peanuts, peanut butter, and dark chocolate dreams. It’s my new favorite way to eat mugcakes and really, my new favorite dessert. It’s a great way to sneak in a fruit serving with dessert and since it’s made with mostly healthy ingredients like oats, whole wheat flour, natural peanut butter, dates, etc; it’s actually pretty healthy, too! You can easily leave out the dark chocolate dreams peanut butter to cut back on the sugar!
Inside out caramel apple mugcake – dairy free, vegan
makes 1-2, depending on how big your apple is
– 2 tbsp oat flour
– 4 tbsp whole wheat flour
– 1 tsp baking powder
– SO Delicious unsweetened coconut milk (or milk of choice)
– 1 large apple
– sweetener of choice, to taste
– optional 1 tbsp vanilla protein powder of choice
– 1 tbsp date caramel (softened dates + water then processed until smooth and creamy)
– couple tsp pb
– couple tsp dark chocolate dreams
– handful peanuts
Combine ingredients to make your cake. Cut off the top of your apple then scoop out the inside. Combine ingredients to make your mugcake, adding enough milk to make a batter. Pour your cake batter into the apple then microwave 1min30sec (or until fully cooked). Drizzle with date caramel, peanuts, pb, and dark chocolate dreams.
