I think this is one of my new favorite desserts. Ok I’m pretty sure I say that about everything now. But this dessert is just so yummy. It has a delicious 3 ingredient crust (oat, dates, and almonds) with a chocolatey middle layer and then topped with a sweet and fruity strawberry layer. It’s the perfect yummy (and healthy) treat to wind down with at the end of the day. Or even start your day with 😉
Raw chocolate covered strawberry slice – raw, dairy free, vegan. can be made gluten free with GF oats.
– 1/4 cup oats
– 10 dates
– 1/4 cup almonds
– 1/4 avocado
– 1/2 ripe banana
– 1 tsp vanilla
– 1 tbsp baking cocoa
– 1 cup strawberries
– 1/4 avocado
1) Combine ingredients in a food processor to make your crust. Press into a dish of your choice. I wanted thicker bars so I used a smaller container (and made 3 decent sized bars) but feel free to use whatever you want. Set aside.
2) Combine ingredients in a food processor to make your middle layer. Spread evenly over your crust. Place in freezer while you prepare the last layer.
3) Prepare your last layer in your food processor and spread evenly over the other layers. Place back in freezer for at least an hour. Top with fresh strawberries. It’s best to take this out of the freezer for 20-30 minutes before serving or, if you’re impatient like me and can’t wait, you can microwave it for a few seconds to soften it back up.
