Mugcake Monday: Breakfast edition – french toast and banana bread

Today’s mucakes are breakfast inspired – french toast and banana bread!

I can’t decide which I like more. The french toast I am pretty proud of because it is a vegan french toast mugcake. That’s right – no eggs in this bad boy.

French toast mugcake – vegan and dairy free, can also be made gluten free with a GF flour

– 4 tbsp whole wheat flour (or another flour of choice)

– 6 tbsp milk of choice

– sprinkle cinnamon

– 2 spoonfulls baked sweet potato

– 2 tsp oil of choice

– 1 tsp baking powder

– 1 tsp sugar of choice (I used softened dates but you are free to use whatever sugar you prefer)

– maple syrup for topping (I recommend pure maple syrup)

Combine all ingredients except the syrup in a small bowl and mix well. Microwave for 1 min 30 seconds. Let cool. Drown in syrup. Die happy.

Banana bread mugcake  – can be made dairy free and vegan by using dairy free milk and yogurt, can also be made gluten free by using GF flour

Cake

– 4 tbsp whole wheat flour

– 2 tbsp coconut flour (or 2 tbsp extra whole wheat flour)

– 1/2 cup milk of choice (or you can even use water)

– 1-3 tsp sweetener of choice

– 1 tbsp oil of choice

– 1 tsp baking powder

– 1 tsp baking soda

– 1/3 banana, mashed

Filling

– 1-2 spoonfulls greek yogurt

– splash milk

– cinnamon to taste

– sweetener of choice, to taste

– optional almonds for topping

 Directions

1) combine ingredients to make your cake. add enough milk/water until it resembles a cake batter. microwave for about 1 min 30 seconds or until completely cooked. set aside and let cool.

2) meanwhile combine ingredients to make your filling. once your cake is cool, cut in half and layer with your filling. enjoy!
