Sweet potato fruit dip

Last year I wouldn’t go near sweet potatoes. Now? Now, i have to have a bag of sweet potatoes at all times plus a couple baked up and ready to go so I always have a stash ready to add to baking/cooking. I love to use them in baking and cooking. They are so versatile and so easy to add to multiple kinds of recipes. Plus, they’re nutrional qualities ain’t half bad :p They’re a great source of potassium, fiber, and vitamin A.

I made this dip on a whim when I wanted a snack and had some leftover sweet potato to use up. I ate this with an apple and I felt the sweet potato complimented the apple perfectly.

sweet potato fruit dip

Sweet potato fruit dip – gluten free; can be made dairy free/vegan by subbing dairy free yogurt

makes enough for 1 medium apple

– 1/3 cup baked sweet potato

– 1/4 cup greek yogurt

– sprinkle cinnamon to taste

– few tsp sugar of choice (I used softened dates)

Combine ingredients in a small bowl. Mix until smooth and creamy. Eat.

Question of the day:

Do you like to eat your fruit/veggies with dip or do you prefer them plain?
