Mugcake Monday: Chocolate edition- chocolate covered raspberry and chocolate with pb frosting

I am back with another round of mugcake recipes. My first couple mugcake recipes can be found here: click me. In that post I uploaded my recipes for a chocolate strawberry version, a raspberry banana version, a psychedelic version (which was my most popular version), and a zebracake version.

Today, I am uploading some of my more recent and favorite creations: a chocolate covered raspberry and a reese’s inspired chocolate mugcake with a peanut butter frosting

Chocolate covered raspberry – can be made dairy free, vegan, gluten free

Ingredients

Cake

– 6 tbsp whole wheat flour (or another flour of choice)

– 6 tbsp milk of choice

– 2 tsp oil of choice

– 1 tsp baking powder

– 1 tsp baking soda

– 1 tbsp baking cocoa

– 1 tsp sugar of choice

– 1/4 cup raspberries

Filling

– spoonful raspberries

– spoonful plain greek yogurt

– splash milk of choice

Directions

1) Combine ingredients to make your cake. Microwave for 1 min 30 seconds.

2) While your cake cools, prepare your filling in a separate bowl. Mix well until smooth and creamy. Remove your cake from the bowl and cut in half, like you would a cake. Spread half of your frosting on the bottom layer of your cake. Place the top half on top of the filling and spread the rest of your filling on the top layer. Top with a few more raspberries to make it pretty.

Chocolate Mugcake with pb frosting: Can be made glutenfree, dairy free, and vegan

Ingredients

Cake

– 6 tbsp whole wheat flour (or another flour of choice)

– 6 tbsp milk of choice

– 1 tbsp oil of choice

– 1 tsp baking powder

– 1 tsp baking soda

– 1 tsp vanilla

– 1 tsp sugar of choice

– 1 tbsp baking cocoa

– optional dark chocolate stevia

Filling option 1

– spoonful peanut butter

– spoonful plain greek yogurt

– splash milk of choice

Filling option 2

– 1/4 cup melted peanut butter

– 1/4 cup milk of choice

Directions

1) refer to the directions for the previous mugcake.Choose which frosting you want to make and spread on your cake then finish off with a dollop of peanut butter and a sprinkle of peanuts.
