Easy make ahead egg muffin breakfast

This morning, in an effort to get more protein and veggies into my breakfast, I made egg muffins.

Veggie Egg muffins

makes ~6-7 egg muffins

Ingredients

– 6 eggs

– mixed bell peppers, diced

– red onion, diced

– 1/2 cup baked sweet potato

– handful diced spinach

Directions

Grease a muffin pan and preheat oven to 350 degrees F. Combine ingredients in a small bowl. Distribute evenly in your muffin pan. I had enough leftover where I could have made a 7th muffin but i chose to use the extra to make a scrambled egg instead. bake for 25-35 minutes. Enjoy!
