Since the weather has decided to be more fall like as of late, I thought it would be the perfect time to make some homemade soup. A recipe from here sparked my interest so I made a few modifications and gave it a go.
This soup has the perfect balance of smokey and sweet! It’s perfect for those cold days when you just want to cozy up on the couch.
Smoked sweet potato and roasted red pepper soup – gluten free. can be made vegan and dairy free by subbing dairy free yogurt.
1 large sweet potato
1 red onion, diced
1/2 regular onion, diced
2 cloves garlic
2 cups cauliflower
1 red pepper, julienne
1 roasted red pepper
3/4 cup water
1 cup plain Greek yogurt
Smoked pepper to taste
optional shredded carrot for topping
1) prepare your sweet potato. PROTIP: Be sure to save the water if you boil your sweet potato. That way you can re-incorporate the water back into the recipe.
2) Add your sweet potato (and water) to your food processor and set aside.
3) prepare your onions and garlic by heating on the stove for about 3 minutes or until translucent. Add to your blender.
4) prepare your cauliflower – Add this to your blender as well. At this point you can start blending. Add in the rest of your ingredients and blend until smooth.
I topped my soup off with a few carrot shreds which is optional but I thought the slightly sweet, crunchy carrots gave this soup a nice flavor and added some texture. I also liked the addition of smoked pepper as I’m not a huge fan of sweet potato and I thought the pepper added a nice flavor and helped take away some or the sweet potato flavor. However, you could make a more “fall-inspired” version of this soup by adding nutmeg and cinnamon instead.
