These are a great wholesome take-it-to-go breakfast for those busy mornings when you’re starving but don’t have time to sit down for a nice breakfast. They have no added sugar and contain plenty of nutrient dense ingredients like bananas, sweet potatoes, and oats to keep you satiated through the morning.
(vegan, dairy free, can be made gluten free if using GF oats like Bob’s Red Mill)
Makes 24 breakfast cookies
3 large bananas
1 large sweet potato
1/2 cup peanut butter
1/4 cup baking cocoa
2 heaping cups oats
1 tsp vanilla
Cinnamon to taste
1. Preheat oven to 350 degrees. Spray a cookie sheet and set aside.
2. Bake your sweet potato until soft (i typically bake mine at 425 degrees for 60 minutes. be sure to cook on both sides to prevent burning). Remove skin and mash in a large bowl. Add your bananas and mash together well. Add your peanut butter, cinnamon, vanilla, and baking cocoa. Mix well. Add your oats in last.
3. Once mixed, drop by spoonfuls onto your cookie tray. Bake for 30 minutes.
4. Let cool and then transfer to an airtight container.
