I can’t remember where I found this recipe but I do remember it is too good not to share. Edward and I ate almost the whole batch in one night (oops).
Makes 12 large cookies
2/3 cup honey or pure maple syrup (if you choose to use maple syrup, do yourself a favor and buy the real stuff)
1/4 cup butter
1/2 cup natural peanut butter
1 tsp vanilla
5 tbsp baking cocoa
1 cup oats
Combine honey/maple syrup and butter in a small sauce pan and stir until your butter has melted. Add your baking cocoa and continue to heat mixture until it starts to boil. Keep over heat at a low boil for 3 minutes. Remove from heat and add in your vanilla and peanut butter. Once smooth, add in your oats and mix until well combined. Drop by spoonfuls onto wax paper and refrigerate until firm. Enjoy 🙂
Note: these are really sweet due to the honey/maple syrup. I’m sure you could cut the amount of honey in half and that would be plenty.
