I found this recipe on chocolatecoveredkatie and adapted it to fit my preferences and the ingredients I actually had on hand. It came out much better than anticipated. The crust was one of my own making and it paird nicely with the cream, chocolatey pie filling.
This recipe requires two parts; a crust and the filling. I chose to make my own crust but feel free to improvise and use something else.
Chocolate greek yogurt pie with chocolate mocha crust – can be made gluten free by using GF oats. Can also be made dairy free/vegan by using dairy free milk and yogurt
1 cup oats
Few tbsp baking cocoa
Spoonful coffee grounds (I used decaf)
1 cup dates
Splash vanilla extract
1/3 cup almond milk
Combine dry ingredients in a food processor and mix until your oats are fine and powdery. Remove the pits from your dates and add to your mixture along with your vanilla. Combine and then slowly add your milk until your mixture starts to form and clump together. Spray a 9 in glass pie pan and press your mixture into the bottom of the pie pan. Set aside.
Now for the filling:
1 1/2 cup Greek yogurt
1/4 – 1/3 cup baking cocoa
1/4 cup cornstarch (can sub arrowroot)
1/3 cup liquid sweetener of choice
2 tsp vanilla extract
Combine all ingredients in a food processor and mix well. Transfer to your pie pan. Place in a 350 degree preheated oven and bake for about 30-50 min or until your mixture starts to firm up. Remove from oven and cool in the refrigerator for a few hours.
