I’m gonna make this short and sweet. I made this breakfast bake yesterday. It’s yummy. Make it. Make it now.
2 cups Oats
3 Egg whites
1-2 cups frozen blueberries
1 tsp Vanilla extract
1 cup Plain greek yogurt (or regular plain low fat yogurt)
1/2 tsp Cream of tartar (or 2 tsp. vinegar)
1 1/2 tsp Baking powder
1 1/2 tsp Baking soda
1/4 tsp Salt
1 cup Hot water
1/3 cup sugar
Preheat oven to 350 degrees f. Grease an 11×7 in glass dish. Set aside.
Combine wet ingredients in food processor (oats, cream of tartar, baking powder, and baking soda).
Add wet ingredients. Mix well in food processor.
Carefully fold in frozen blueberries.
Spoon batter into baking dish.
Bake for 45-60 min.
Enjoy breakfast for a week 🙂
Other breakfast combinations
– pumpkin + banana + blueberry = 3 cups oats instead of 2, 1/2-3/4cup pumpkin purée, 1/2 cup yogurt, 1-2 bananas, all other ingredients same
– orange + cranberry = 1 cup frozen cranberries (add last), 1 cup orange juice instead of 1 cup water, 3 cups oats, all other ingredients same
