Even though these bad boys are made with whole wheat flour and a large amount of oats, do not let that fool you into thinking they are healthy. They still contain a good amount of butter, sugar, and chocolate. However, I will say these cookies taste fantastic in the morning 😉
I can’t take credit for this recipe so the original can be found here: http://allrecipes.com/recipe/chewy-chocolate-chip-oatmeal-cookies/detail.aspx
As always, however, here is my version with the tweaks that I made:
1 cup butter, softened
1 cup packed light brown sugar
1/2 cup white sugar
2 teaspoons vanilla extract
1 3/4 cups whole wheat flour
1 teaspoon baking soda
3 cups quick-cooking oats
1 cup semisweet chocolate chips
1) Preheat the oven to 325 degrees F (165 degrees C).
2) In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt; stir into the creamed mixture until just blended. Mix in the quick oats and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets.
3) Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
I used a small ice cream scooper to get nice consistent sized cookies and all together I got about 36 cookies. Since these do contain more fiber than your typical cookie you may want to pace yourself so you don’t end up with a stomach ache. I ate 2 cookies and that was plenty. These will definitely fill, you up which is a good thing.
